第13集 - 粟米汁、粟米斑塊飯、無花果南北杏豬腱湯、無花果蜜汁豬扒

鼎爺與阿譚特意到街市挑選飽滿甜粟,不惜花功夫鮮拆粟米,再煮熟、打爛、隔渣製作粟米汁,又香又綿。另把急凍魚柳開雙飛炸香,再以雞湯煮粟米後埋蛋花芡,盛起淋在魚柳上,拌飯一流!鼎爺帶阿譚見識過南海賢魯島出產的無花果後,先用無花果乾、肇實、生熟薏米等帶來「無花果南北杏豬腱湯」,但要留意下材料次序及翻滾的時序。再用新鮮無花果汁、無花果片醃豬扒及調配醬汁,炮製「無花果蜜汁豬扒」;甚麼方法可令炸豬扒香脆又鬆化?
